So I'm wondering which combo I should purchase:
Splinter Cell Conviction (standard edition)
Splinter Cell Conviction (standard edition) + Chaos Theory separately
Elite Echelon
If you do reply, feel free to add in a reason why. :D
Thanks :)

If you don't own them, Elite is the way to go.
The entire Splinter Cell Series is great.
The first one is of course legend, but aging now.
The second one (Pandora Tomorrow) is still not on steam, to my knowledge. It is quite good to, and introduced the concepts for Chaos Theory's success.
The Third and most talked about (Cannot Recommend Enough) is simply amazing. Chaos Theory has so many interesting things to do. It makes MGS look like Hello Kitty sometimes. The level designs, graphics and AI are really great. The tactics and equipment are great, and the designers are the ones currently working on Conviction (UBI Montreal).
Double Agent, was poorly made for PC. It has unique features that make it its own, but it's not as good as CT.
I'd say the second or third of your options. Just because there are still people, including myself, that still play coop all the time. Depending on your partner, missions can go very different directions in even the most linear of times.
GLHF and add me up if you ever want a good partner.
