Kill a certain amount of people

I've noticed there are some achievement on Steam that require you to kill a specific number of enemies. DO I achieve this online or in Single Player? Because I've never been good at any multi player game :l

Any battle counts (you don't even have to win them).
If you want to check how many you have killed, you do have to go into the MP menu though:
there is a button "Player Stats" there which will show you some information about stuff you need for achievements
(how many battles you've won, how many people you killed in duels, how many assassinations you have performed etc).

So I can achieve this in Singleplayer?

Yes.
But it is going to be very hard in campaign, because it's not back to back battles like MP.
I'm not sure whether autoresolve casualties go into the calculation, I would think they don't.

Oh, and you do have to be online in Steam (i.e., not play in offline mode) so the game can update the stats.

This part is very important, I always used to play in off-line mode and now that I have my War Room I'm embarrassed to say that my stats show I have only fought about 7 battles and I played the game pretty much every weekend from release date until Napoleon came out :(
