Final Fantasy VI (I especially like the 'Final Fantasy VI: Grande Finale' album which has a fantastic orchestral rendition of Terra's Theme & Kefka's Theme.
Final Fantasy VII - The music pulled me in with the very first track (bombing mission) - There's a 'Piano Collections' version of this soundtrack and all of the tracks are fantastic, especially main theme, Tifa's theme, and Aerith's theme. Brings tears to my eyes.
Anything by Jesper Kyd - Particularly Borderlands. Fantastically weird, but awesome music.
Bioshock - I thought the music in this game was pretty epic
HL2:Episode 2 - All of the HL music is good, but I think Episode 2 had the best of them all so far.
Castlevania Symphony of the Night - EPIC!!!!
Fallout 3 - Love Inon Zur
Perfect Dark
Secret of Mana
Earthbound (a.k.a. Mother 2)

And lastly.... SUPER MEAT BOY!!!!! I just got the CD soundtrack signed by the composer yesterday. :)

There's more, but I can't think of anything else at the top of my head.

EDIT: How can I forget Duke Nukem??? It had a rockin soundtrack in its day. If you can, find the soundtrack to Duke Nukem - Total Meltdown. It was for the PSX and so it had CD-quality soundtrack instead of MIDI like the PC had.

Oh, and the Myst games....

EDIT 2: The Resident Evil (a.k.a Biohazard) series has some good music, too.

Also, talking of videogame music I always thought the tunes from the older Streetfighter games were really cool. Like Guiles theme in Streetfighter 2. But it is such a flexible tune you will see as my examples below demonstrates.

AH yeah, Painkiller loved the music from the village (start of demo) later in game, with the flying hag, steakgun and the hanged men. I recently bought the Black edition on steam as I never played the game apart from the demo when it came out but it has excellent ambience, especially on the opera house level and when all the guitar riffs kick in when the hoardes arrive. Great game.
