How do I change my gear from in game or do I have go to back to main menu to change it each time?

I also only found the hat when changing my character, wheres the sword and stuff?

you can't!

You have what you have in your hands. if you lose it it's lost forever.

Magicka doesn't have an inventory.

So the only customisation I have from starting the game is the hat/not hat?

Are there any differences with items or are they just for show?

Also if I pick up a item can I switch it back? I picked up the first white staff and I couldn't pick up my old one.

Yes you can switch back, but that might have been a glitch. And yes items are different. When you get the chance, switch out your starting sword, its a piece of crap. Different weapons/staffs give different abilities, like teleport, or summoning or fire damage etc...
