Is there any kind of manual for this game at all? Besides the in-game tips, I am yet to see one.

There is a manual available through the steam client once purchased, but it doesn't say anything about the DLCs.

What do you want to know about the DLC? In the store page you'll find the descriptions.

I want to know how the gameplay changes.
Are there new controls? Are there new units? Are there other new gameplay options and how do I acccess them?
Is that asking to much?

I have only played the Saxons cuz I bought the game during Christmas sales and The Druids was not released yet. The controls are exactly the same.
Well here is some info (copy/paste from other post of mine with little additions):
The Knights and Vassals DLC only adds new units to the game, you can recruit them as you progress on the campaign. Two new knights join after you conquer your first stronghold. The abilities and stats are almost the same of the vanilla game. And you cant upgrade the common DLC units.
For Example:
Normal archers can be upgraded to Master Longbowmen
Briton archers (DLC) Remains the same and are inferior, this unit is useless in my opinion
Briton cavalry (DLC) kinda helps but only at the beginning of the campaign, you'll find better cavalry very soon.
These units I never used them so I cant give you any info sorry :P
Saxon Knight is unlocked after conquering Norfolk
Welsh Pikemen is unlocked after conquering Norgales
The Legendary Artifacts DLC adds powerful armor sets, but its not easy to obtain them, each piece it's a reward after a very difficult battle quest and spawns all over the place, even on mistrustful territories so it can be tricky to get them. At first I just ignore the battles (you have 50 turns limit for each piece).
The armies guarding them are really powerful but with a little micromanagement and planning on the campaign, you can unlock powerful units a bit early and stand a chance.
The Saxons DLC adds new quest, artifacts, armor sets, units, knights, spells and let you set the victory conditions of the whole campaign, see image (http://cloud.steampowered.com/ugc/541759870962803152/9FC57B392FFE04DED19429E7407B56004D89474C/), the gameplay of the campaign its more strategic and focus on diplomacy too. See the store page (http://store.steampowered.com/app/24447/) for more detailed info
