You can replay a chapter once you've completed it.
Not worth the effort to go back and find a few missing ones, IMO.

In Chapter Select menu you can reload any previous checkpoint you've been through, but have in mind that by doing so, you will overwrite the current save data.
An example: you are currently on Chapter 4, but you want to replay a scene from Chapter 2. You then select it from the menu and play it. If you go to the Main Menu and select "Continue game", you will be in Chapter 2, where you last have been, instead of Chapter 4. But Chapter 4 will still be available from Chapter Select, and you can go back there with all of your already taken collectibles safe and sound.
After you finish the game once, there will be a New Game+ option at the Main Menu. In it you can replay the story mode from the beginning but with all weapons, upgrades and teeth you had when beating the last stage. All the collectibles you got from the first playthrough will be already marked as collected, but still physically available on the levels. The difference is new collectibles (like bottles and memories) shine a bright light, and those already collected don't.
It is worthy to note that every collectibe in the game can be taken from the first playthrough. None of them require a weapon or ability that you can only get afterwards. They only require a thorough searching.
And they only unlock extra material like character files and conceptual arts. Don't know if something special happens at 100% though, since I'm still at 97%.
