Just had a go of the demo and the tutorial is terrible. It mainly gives you instructions for keyboard commands with a few (very few) Xbox controller commands and tells you how to take off and ascend/descend to certain levels but then doesn't tell you how to maintain that specific height and so you just end up plummeting to the ground!
Worst...demo...EVER!

If you are descending too fast, you can press the SPACE bar which will put you into 'Auto Hover' which at least while you are learning to fly will steady your helicopter. Press the space bar again when you wish to fly normally. So, if you find the chopper dropping too fast, hit the space bar and then start applying 'up collective'. This will at least prevent you from crashing to the ground until you have enough practice to recover without resorting to auto-hover.
To control your height while hovering you need to manage the collective which is mapped to the shoulder buttons on the 360 pad.
While in non-hover you need to manage both the collective and the forward and reverse cyclic (left stick).
Pushing the left stick up will make the nose of the helicopter dip, this will give you both forward momentum and cause you to lose height, so you will need to add a little up collective to counter this.
Pushing the left stick down will cause the nose to rise. This will decrease your forward momentum but also cause you to gain height, so you will need to apply a little downward collective to counter this.
Increasing and decreasing the collective will also have a torque effect which will cause the chopper to spin left or right. To counter this you will need to apply the opposite rudder (which is in fact powering the tail rotor). I can't remember off the top of my head which keys these are (I use a flightstick).
Bottom line is that it is not an easy thing to fly straight off - you have to practice. Stick with it for a while and see how you get on.

Yeah, I tryid it too. It didnt find my seitek x-52 pro and no tutorial is unacceptabel, so I uinstalled it.

You guys complaining that there is no tutorial in the demo must have overlooked it.
There are 3 basic tutorials that take you through all the basics.
You can even run them on 3 different difficulties.
I just ran through all of them. First on trainee and then expert. Now I have no problems flying the helicopter... well except the basic fact that helicopters are %#¤%& difficult to fly :-)
You'll need at least a joystick, and to have it set up right to fly the helicopter on expert.
The right setup is not mapping it like the mouse is set up as default. You need the stick to control cyclic, and the thrust slider (If you have one) to collective. If your stick can be twisted, you need to set that axis as the pedals.
I'm using a cheap old Logitech Extreme 3D pro and it works fine. To really master flying I would probably need a more advanced stick though.

To anyone who is a novice pilot and is having trouble controlling a helicopter, I can thoroughly recommend having a read through the Rotorcraft Flying Handbook (http://www.faa.gov/library/manuals/aircraft/media/faa-h-8083-21.pdf). It gives a really good grounding on how the flight dynamics in a real helicopter work (the relationships between collective, cyclic and torque) and although the flight dynamics in ToH are not exactly the same as in real life, it helped me a lot to understand why the helicopter was acting as it was when I was flying.
I will reiterate that this game is not easy - it's going to take more than 5 minutes to get the hang of it. I didn't think it would be my thing, but I now absolutely love it.

I tried the demo last night, and I don't think I'll be buying the full game. I must confess that I still harbored a tiny shred of hope that it'd play more like SimCopter than an actual sim, but that's obviously not the case, lol. I'm not criticizing the game, BTW; it's just not my style.
But yeah, we need to badger EA/Maxis/the powers that be for a SimCopter 2...

downloading the demo, is the game joystick compatible? I have a good flight joystick i wanted to use, but would it work?

yes. your joystick will work. it works great wtih my entire X52 pro system which is joystick and throttle. the routine to recognize the axis of each stick is very good.
