What is the difference between the two?

Perfect requires you to collect all gold bars while Normal does not. Perfect will trigger an automatic fail if you miss anything and force you to start over.

Perfect will also autofail you out of a bonus level if you miss a gold. So you will probably get higher scores on normal difficulty.
