i was sent a Guest Pass to Team Fortress 2, and im currently downloading the game. when my 3 day trial runs out, may i keep TF2 on my system and pay for it at a later date ?

so for example if it runs out on the 10th october, can i go back to it and buy it on the 21st without re-downloading it.

Yes, that should work.

Many people played UT3 on the free weekend and didn't redownload after buying it. I see no reason why this shoudln't work for other games aswell.
You probably need to change the cd key after the purchase only.

I did this, yes. I downloaded the game with a guest pass, it ran out, a month later I purchased and played instantly. The files remain, you just can't play :)
