Everytime I launch the game the steambuildbot is asking for admin auth. Whats up with this?

You need admin rights to play the game as it is online.

I'm going to be looking into this, but can you tell me when admin access is required to 'play online'? As so far I was able to both join and create a lobby.

So, I successfully played this game online after rejecting the buildbot elevation dialog. So, I'd like to know why the game continues to do this on each launch, or how to get rid of this problem.

Alternately, if the game does indeed need admin right to play online as you state. I think this should be clearly listed on the system requirements on the steam page. It would have altered my choice to purchase this game.

At a guess, one of the pre-install processes didn't complete properly.

In regedit:
Navigate to HKEY_CURRENT_USER\Software\Valve\Steam\Apps\24240
You should have several entries but the important keys here are two DWORDs; DXSetup and PhysX, which should both have values of 1. If one or both don't exist, create them.

Some claim to not get these files at all after a crash, I have in the past, but right now there's none in my folder either

You can also find Payday crash log files in (Win7, I'm sure you can translate the folders to a different OS though):
C:\Users\[USER_NAME]\AppData\Local\PAYDAY
crash.txt
crashlog.txt

and also in:
C:\Users\[USER_NAME]\AppData\Local\Temp
cra????.tmp
Where ???? are four characters from 0 to F. Eg, craB09A.tmp, cra7FBB.tmp.

They are plain text files, so if they are present, you might be able to figure out the problem yourself. They are not the same as the crash dump .mdmp files though.

Although, if the .mdmp file isn't being generated, I'm not sure of the likelihood that those others are either. Might be worth a look though.

I've had that problem before too. I had to reset all settings and it finally quit doing that.
