A button, which when I hold it, and click on a county, all levies in that county are raised.

Land, Naval or both.

And no, going to the military tab is not a control to do that.

CountRy or countY? I'll assume county, since I find that rather annoying as well.

You can select a county, and on it's county window there are buttons for raising all the levies/ships within that county (regarless of whether or not they're yours or your vassal's, they're all reaised). But this can get rather repetitive if you need a lot of troops, or have a lot of territory, and don't want them somewhere specific. I, too, would like to be able to hold, say, Alt and Shift and just left-click to bring up all levies in a county right quick.

And yeah, I know about the military tab, but doing it via that is just ballache.
The counties arent listed geographically.
The convenience of doing it via the map would just be very very nice.

No, not on the Military window, on the counties themselves. Inbetween the pictures of the county's capitol holding (usually a castle) and the other holdings in the county (cities and temples). There's buttons there for levies and fleets of that county alone. But as I said, if you've got a lot of territory, that quickly becomes tiring.
