What do those mean?

Fulfill the requirements without changing class after dying (and therefore deleting previous character) or even WITHOUT dying at all??? That would be rediculous...

I think its a bit rediculous aswell.

Almost all of the Steam Achievements, barring the character unlock ones, are fame bonuses. Which means when you eventually die, you will get +10-25% bonuses to your base fame that was accumulated.
And the fame bonuses can occur on every character(except Ancestor), while the achievements only trigger the first time.
