ME1 how do I start a new playthrough with a leveled up character?
I just did a new career and finished the game at level 51, which made me wonder how to get to 60. I did a little research, and people said they were ending their first playthrough at around level 55, and it seemed like they started the next playthrough at that level. Is this the case? Or are they starting at level 1 on the next playthrough, but taking advantage of the bonus to experience from getting achievements?

You start at the same level you finished the game.

Sorry for the noob question, but how do I do this? When I hit resume after the credits roll, it takes me to the save just before I fight Saren. If I start a new career, it puts me at level one. When I load the career I just finished, it gives me just my old saves from that career.

From the Main Menu:
New Game>Import ME3 Character IIRC, all your skill points will be freed up so you need to assign them again at the first opportunity. |

Called "new game plus", by importing the Character you just finished playing.

dont press resume, select new game and select your character. it will be at the same level you finished at.
