There are a couple games that have VAC enabled in singleplayer. This one comes to mind...

Dead Island has VAC enabled by default in single player as well.

I don't trust VALVe or any game developer saying VALVe Anti Cheat is not enabled on Single-Player.

I won't ever trust that.

Now you're just being paranoid. If they actually say that VAC is not active for the single player mode of a game then it is not. Also as far as I am aware all of the VAC protected games you can choose if VAC is used or not.

I've used hundreds of trainers on my single player games and have never had an issue with VAC, most of mine come from a paid trainer site that I became a member of years ago.

However, again I will say that I have never been VAC banned for using a trainer in a single player game. I have never tried them in multiplayer games though and would not recommend doing such.

I completed Dead Island multiple times, got bored & used a trainer in single player. It didn't work well so after half an hour messing around I deleted it.

That was over 4 months ago. I'm not banned. (Yes I know VAC bans are delayed, but not that much)

Now I just use DISE.

Maybe you just got lucky, all I know is that Dead island has a VAC on/off setting in the options menu that isn't greyed out when you toggle between co-op and single player.

You can disable it if you wish though in settings, majority of games do not give that option.
