What would be the best way for me to implement floating text in a video (i.e. text that exists within the game world and can be observed at different angles by the camera as it moves)? Is there a built-in function to do this, or would I need to do something like create a custom model for each block of text and import that into the video (sounds long-winded, but I could be wrong)?

There is a few 3d Text models floating about. There is also a way to make some textures show your text. it all depends on how you want present it

You could also just download the full alphabet in 3D from garrys mod: http://www.garrysmod.org/downloads/?tag=letters
Another alternative is to use motion tracking software like After Effects and just motion track the scene and put some text in. |

you can edit light textures so they shown text, but you'd need a solid surface, dunno if there are any transparent objects so you could make some 2d flying text.
