FOV/menu Fix for 3 monitors?

I'm running this game at 5760x1080 and the game looks great but it seems like the view is really close to the back of his head. Also, in order to quit the game, I have to guess where the exit option is on the main menu. I know this game may not be that advanced to really work well with 3 monitor support, what do you expect for $15? Just curious if someone has a solution of some kind?

I am aware of the post, what I was asking is if anyone (maybe someone who has dabbled in the settings files) has found a way to work with it?
