How can I stop auto updates?

Does anybody know how to stop auto updates for HL2?
My old computer played the 2004 dvd version just fine with the Maldo sound package.
I just got a new computer and installed HL2, ep1 and ep2 off the Steam site and I see they have screwed around with the motion controls so that the walking and running and the boat and buggy have been slowed down alot.
To the point where its difficult to move quickly without slowing down and stopping.
I can reinstall it off the dvd but how do I stop Steam from
auto-updating it to where its screwed up again?

In your library right click the game, Properties. Updates tab and change to "Do not automatically update this game"

Auto-updates

OK great
When I have to enter the serial number off the dvd Im about to reinstall, will Steam take over and try to update it before it even gets in the library?

Yes go into "offline mode" before you install.

Steam >offline

then it should not try and connect to the download server.
But for some reason it sees that you need an update it will freeze the game so you can not play it until it is updated.

updates

OK I reinstalled the DVD.Before I did I made sure to click do not update on each of the games in the library{ the titles were still there after deleting the steam download version of the game}
and the damn thing automatically updated them again.
If I try to install off the DVD with Steam offline it tells me I have to be online to register them.
Is there a way to fix this>
