Jailbreaking: Maybe. Apple tries it's best to squash it (Sucks)

Voice assistant: Outdated, robotic sounding, and feature limited out of US (poop!)
Sues Google over slide to unlock: Yup. (can't compete? get a US judge to ban it!)

iPad 3 graphics is actually worse than iPad 2's. Check out graphical comparison of NOVA 2.

Apple really doubled the GPU power of the iPad 3 (dual core GPU to quad core GPU), finally catching up with Android (high end had quad core GPUs years ago). But the retina display requires 4x more graphical power to deliver the same quality of graphics.
