How can I use in the game Team Fortress Classic's chat feature

Press Z, if this doesn't work press Y. You can change the key in the menu.

If you mean voice, I don't use it so I'm not quite sure how this is handled. K used to be the default key to activate the microphone, but now you can also right click on the Steam icon and go to "Einstellungen", "Voice".

This is the chat settings for steam (friends/community) this doesn't have any effect with the voice settings that are set within TFC, and as you said the default for voice chat is 'K'

Z by default is call for medic. Y by default is public chat. U by default is team chat.

.. with a QWERTY keyboard. For Germans like the OP, it's QWERTZ - thus messagemode1 is on Z.
