Just wondering, what's the point of the crowbar hidden in the room where you change into the hospital uniforms?

You also get given it in the elevator, don't think this is random as I have got it everytime so you don't need to pick it up from Dr. Crowbar's locker

Also did picking up the crowbar trigger the alarm for anyone else? I just changed into doctor's scrubs and picked up the crowbar and it started an assault

Picking up the crowbar doesn't trigger the alarm. Likely because you were in the change room, where you can't keep yelling at civvies, one got up and hit the button.

By then you should have the turrets in place that keep the civilians from pushing any buttons.

If you are in scrubs, then it should be giving you a prompt about "press [X] to start the heist" which means you can't pick up the crowbar without starting the heist first.

Afaik you only need to walk near the locker to pick up the crowbar. =o

As for the sudden alarm... had that too once or twice and wondered. Maybe it is a guard coming up that shouldn't or some other bug.
