Game is really tough for me

I'm level 10 and heading towards Maxos Temple. The damn group of soldiers is blocking my path and I die whenever I encounter them

It's because you're only at Level 10.

Finish off the rest of Broken Valley first. The opponent at the end of Maxos temple is level 15, so it would help if you were at least level 13 or 14 when you enter (level 15 gives you access to the Healing spell - level 1 is handy, and helps conserve potions - as well as Explosive Arrows, etc).

BTW when you finish off Maxos temple you will get access to a new area. Your first encounter there you can mindread to go up a level, so the higher level you are (I made it to level 18 in D2:ED and 22 in DKS in the fjords) the more of an experience bonus that will be. You don't need to get to a high level, but it would be better if you got to a new level before entering, to get a full level bonus (equip anything you have with a Wisdom boost).

Now I'm in the antechamber with the poison rain. I get that you have to stay in the light. However, the part where I have to jump onto the raft in the middle of the pool is proving impossible. The boss is simply standing on the left and prevents me from doing so by shooting his instant-kill arrows

Have you gone up a few levels? Short of a bug, I don't think Jagon's arrows shouldn't instantly kill.

Lowering the difficulty level temporarily (if you are not already on casual) may help.

Do you have your creature active? If not summon it before you are in range; if it attacks Jagon (probably more likely with a mage or ranger head than warrior) it should distract him long enough for you to get across the raft.

Have you tried drinking an armour or healing potion, etc, before coming into range?

Rush Attack would force Jagon to switch to a melee weapon. Hide in Shadows could let you get past the raft jump and into cover again (Jagon would be blocked, depending where you stand, but there are a couple opponents on the other side and a statue that shoots fireballs to avoid).
